I’m a big fan of cookies, but am also trying to cut out gluten. Peanut butter is one of my favourites (with jam or banana and honey). So these gluten free (and vegan) cookies, to me, are just perfect.

The recipe below is enough for 3-4 cookies (brilliant if you’re single), but can easily be doubled if you want to make a larger batch.

I also treat this as a base recipe and tend to mix in other things like raisins or seeds or nuts (haven’t tried jam or banana yet, but there’s a thought).

So here goes:
Ingredients:

3 tbsp gluten free flour
2 tbsp peanut butter (or any other nut butter)
1/16 tsp baking soda
1/4 tsp pure vanilla extract
2 tbsp honey
1 tbsp sugar

Method:

Combine all ingredients until a dough forms. Roll the dough in your hands to create cookie shapes. Bake at 180C for 8-10 minutes.
